I've done a lot of adventuring with a lot of different gear and my personal choice, right now anyway, which is end of summer, 2018, is this guy right here, the Fuji X-T20 with just one lens, the 18-55 F2.8 to F4 variable aperture image stabilized zoom lens.
the next camera I'm trying out for my everyday carry series is the Fuji xt20 I was drawn to this camera because of its 24 megapixel XTR 3 sensor the same sensor as the X Pro 2 paired with the tiny 27 mm f2.8 pancake lens this setup isn't much larger than the Sony zv1 the last camera I considered
